Recipes from Terrie's Kitchen
Many of our guest have asked if Terrie would share some of the recipes she uses to perform her breakfast magic. She is happy to share! I will warn you, however, that a good part of what she does in the kitchen is truly magic. Years ago my brother asked her for her biscuit recipe. She dictated it to him from memory. A year later he asked her again for the same recipe. Again, she dictated it to him. This happened for several subsequent years. Final my brother, a little exasperated said that every year the recipe had been different. There is a great deal of science in cooking, but equally there is an element of art. When I prepare breakfast I use the science. When Terrie cooks, it is all art! I do an acceptable job, but I will admit I lack the magic!
Scones
Ingredients:
1/4 lb butter
2 cups flour
1 egg
1 Tbs baking powder
1/3 cup compacted brown sugar
1 teaspoon salt
1 cup heavy cream
1 cup dried fruit
Coarse sugar
Process:
Grate butter and freeze overnight.
Mix flour, salt, sugar, baking powder, and fruit in a medium mixing bowl.
Stir butter into dry ingredients.
Stir cream and egg together, then and to dry mixture.
Form into a ball and flatten to an eight inch circle.
Pour remaining left over cream on top of dough as a glaze,
Sprinkle with coarse sugar.
Set in refrigerator for 15 minutes.
Back in 410 degree oven for 15 minutes.
Cool on a cooling rack before serving.
